One of our favourites at Phengphian Laogumnerd Cuisine is the thai peanut pork which the whole family can enjoy. This is a very simple recipe, but an equally delicious one too. Start by coating a slow cooker with cooking spray. Place the bell pepper strips and pork chops into the slow cooker. Next, pour the teriyaki sauce, vinegar, red pepper flakes, and garlic all over the pork chops, and cook on a low heat until the pork chops are tender, this can take up to 8 hours. Once tender, remove the pork from the slow cooker, and whisk in the peanut butter until smooth. Place the pork back on the slow cooker and cook for another ten minutes. Once you have done this, for top presentation points, sprinkle the pork with green onions and peanuts to garnish. You could even decorate with lime and lemon wedges when serving. The great thing about using a slow cooker is that it frees up your oven and stove for other uses and is a good way to make large meals for the family or for special occasions. It is also very convenient in that it can be left pretty much unattended all day for many recipes, you can put the ingredients in the cooker and get on with the rest of the chores you need to do around the house and come back to a warm meal waiting for you which makes it an excellent choice for a busy day.
